- Flour 90 gr: 1/3 durumwheat
- 1 larg Egg
- 2/3 ’00 flour
- a teaspoon of olive oil
- a pinch of salt
Make a dimple in the flour and break 1 large egg into it, add a teaspoon of olive oil, salt and mix all the ingredients. Transfer the mixture to a chopping board and knead the dough until it becomes smooth and soft. Leave it to rest for at least 15′ minutes, then roll out the dough thinly and cut into the desired size. Cook in boiling salted water for a few minutes.
